Mr. Mototsune Aikawa, the master brewer of Gekkeikan’s historic UCHIGURA Saké Brewery, learned his craft in the Tajima area of the Hyogo Prefecture. In his 30 years of work, Aikawa’s technical mastery has perfected our handcrafted brewing process. In April 2015, during the 70th Tajima In-House Brew Research Society meeting, Aikawa was awarded the Hyogo Prefectural Governor’s Award, the highest award in Junmai category.
Founded in 1906, UCHIGURA Saké Brewery produces HORIN JUNMAI DAIGINJO, our flagship saké, We also craft SAKEKOBO SHIBORITATE DAIGINJO, distributed only to visitors of the OKURA SAKÉ MUSEUM. This delicate saké is kept refrigerated until ready to be enjoyed. Our DAIGINJO is brewed especially for competition with the National Bureau’s Research Institute of Brewing.
